Easy Green Goddess Pasta — Herb Avocado Sauce

Ingredients
  

For the Herb Avocado Sauce
  • 1 ripe avocado soft, but not brown inside
  • 1 cup fresh herbs (basil and parsley) about 1 packed cup total
  • 1 small garlic clove or half if you want it mellow
  • 2-3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 2-4 tablespoons water plus a splash of reserved pasta water
  • Salt and black pepper to taste
  • 2 tablespoons grated parmesan or nutritional yeast optional
  • 1 spoon of plain Greek yogurt optional for extra tang
For the Pasta
  • 12 ounces spaghetti or penne or any pasta shape you prefer

Method
 

Cooking the Pasta
  1. Boil pasta in salted water. Before you drain it, scoop out about 1 cup of pasta water and set it aside.
Making the Sauce
  1. Add avocado, herbs, garlic, lemon juice, olive oil, salt, and pepper to your blender.
  2. Blend until smooth. Add water a tablespoon at a time until it looks like a pourable dressing.
  3. Taste it. Adjust flavors as needed (more lemon, more salt, etc.).
Combining
  1. Toss pasta with the sauce off the heat. Add a splash of reserved pasta water to help it coat every noodle.

Notes

To prevent the sauce from turning brown, press plastic wrap directly onto the surface before storing. It's best used within 24 hours.
