Ingredients
  

Grain Base
  • 1 cup brown rice, quinoa, or farro Use whatever you have on hand.
Salmon
  • 2 fillets fresh or thawed frozen salmon Season simply with salt, pepper, garlic powder, and lemon zest.
Crunchy Toppings
  • 1 cup cucumbers or shredded cabbage Add your choice of crunchy veggies.
Creamy Toppings
  • 1 whole avocado Slice or mash as desired.
Tangy Toppings
  • 1 slice lemon To drizzle over at the end.
Greens
  • 1 cup spinach or arugula Use as a base or topping.
Sauce
  • 2 tablespoons lemon tahini or olive oil and lemon Optional sauce for flavor.

Method
 

Preparation
  1. Cook your grain (brown rice, quinoa, etc.) according to package directions, or warm leftover rice with a splash of water.
  2. Preheat oven to 400 F if baking the salmon.
  3. Season the salmon with salt, pepper, garlic powder, and a little lemon zest.
Cooking
  1. Bake the seasoned salmon in the oven for 10-12 minutes or pan-cook for a few minutes on each side until cooked through but still juicy.
  2. While the salmon cooks, chop cucumbers, slice avocado, and prepare any other toppings.
Assembly
  1. Build the bowl by layering grains first, then greens, followed by salmon, toppings, and a drizzle of sauce.
  2. Finish with a squeeze of lemon juice and a pinch of salt.

Notes

For added flavor, incorporate toasted seeds, nuts, or feta cheese. Keep sauces in separate containers for meal prep to avoid sogginess.
