Easy Gochujang Chicken

Ingredients
  

Chicken and Marinade
  • 1.5 to 2 pounds chicken breasts or thighs
  • 2 to 3 tablespoons gochujang
  • 1.5 tablespoons soy sauce
  • 1 to 2 tablespoons honey or brown sugar
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 2 teaspoons sesame oil
  • 2 to 4 cloves garlic, minced
  • 1 teaspoon grated ginger (optional but great)
  • Black pepper
Toppings
  • Sesame seeds and sliced green onions for topping

Method
 

Preparation
  1. Heat your oven to 425 F. Line a sheet pan or use a baking dish.
  2. Mix gochujang, soy sauce, honey, vinegar, sesame oil, garlic, ginger, and a little pepper in a bowl. Taste the sauce and adjust sweetness or heat as desired.
  3. Pat the chicken dry and place it on the pan. Lightly salt it if you did not pre-salt earlier.
  4. Brush or spoon about half the sauce on the chicken. Save the rest for later.
Cooking
  1. Bake until the chicken is cooked through. For breasts, start checking around 16 to 18 minutes depending on thickness. Thighs may take 18 to 24 minutes.
  2. When it is almost done, brush on the remaining sauce and bake 2 to 4 more minutes. If you want a little char, you can broil for 1 to 2 minutes, but stay close to avoid burning.
  3. Rest the chicken for 5 minutes before slicing to retain juices.

Notes

Tips for success: Do not pour all the sauce on at the beginning. Use a foil lined pan to ease cleanup. Start with less gochujang if you're unsure about spice levels and adjust to taste. Let chicken rest before slicing for better juiciness. This dish can also be made ahead for meal prep.
