Ingredients

  • 2 cups All-purpose flour Gives structure

Wet Ingredients
  • 1 cup Unsalted butter For rich flavor, softened
  • 1 1/2 cups Granulated sugar For sweetness and tender crumb
  • 3 large Eggs For lift and texture
  • 2 tsp Vanilla extract Use high-quality vanilla
  • 1 cup Milk Whole milk preferred, but 2% works
Add-ins
  • 1 cup Rainbow jimmies sprinkles Best for baking, avoid nonpareils

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease your cake pans and line the bottoms with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, and salt. Set it aside.
Mixing
  1. In a larger bowl, beat the butter and sugar until fluffy and lighter in color, about 2-3 minutes.
  2. Add the eggs one at a time, mixing after each. Then stir in the vanilla.
  3. Alternately add the dry ingredients and milk in turns, mixing just until combined.
Baking
  1. Gently fold in the sprinkles.
  2. Divide the batter into the prepared pans and bake for 22-30 minutes or until a toothpick comes out clean.
  3. Cool in the pans for 10 minutes, then turn out onto a rack to cool completely before frosting.
Frosting
  1. Frost with a simple vanilla buttercream made of butter, powdered sugar, milk, vanilla, and a pinch of salt.

Notes

For best results, chill the frosted cake for 20-30 minutes before slicing. This helps the frosting set. Can be stored at room temperature for a day or refrigerated for up to 4 days.
