Preparation
- Sauté the diced onion in a little butter over medium heat.
- Add minced garlic and cook for about 30 seconds until fragrant.
- Pour in the chicken broth and add the baby potatoes.
- Simmer potatoes until they are almost tender, about 10-15 minutes.
Cooking
- Add the smoked sausage and corn to the pot, and continue to simmer.
- Cook until potatoes are fully tender.
- Add shrimp to the pot and cook until they turn pink, about 2-3 minutes.
- Turn off the heat, then add the remaining butter, lemon juice, and seasoning to taste.
Notes
Do not overcook the shrimp; they should only take a few minutes. Taste the broth before adding shrimp to ensure it is flavorful. To thicken the soup, mash a few potato pieces against the pot and stir them in.
