- Put a large skillet on medium heat and cook the bacon pieces until they are browned and starting to crisp. Stir now and then to prevent burning. Scoop the bacon out and leave the drippings in the pan.
- Toss the onion into the bacon drippings and cook for a few minutes until it softens. Add garlic for the last 30 seconds if using. If the pan looks dry, add a little butter.
- Add the chopped cabbage in batches if needed. Season with salt and pepper and stir to combine.
- Cook the cabbage for about 10 to 15 minutes, stirring every couple of minutes. Adjust cooking time to reach your desired tenderness.
- Stir the cooked bacon back in, taste, and adjust seasoning. If it tastes flat, a tiny splash of apple cider vinegar wakes it up.
Notes
For variations, consider adding a pinch of sugar for sweetness, more veggies like bell pepper or carrots, or even replacing bacon with turkey bacon or smoked sausage for a different flavor profile. Serve with cornbread or biscuits for a complete meal.
