  • 2 cups fresh corn kernels (or frozen, thawed) Fresh is best, but frozen works as well.
  • 2 medium Roma tomatoes or cherry tomatoes Use whatever looks best.
  • 1/2 medium red onion Rinse if you want a milder flavor.
  • 1 medium jalapeno Optional, add for extra heat.
  • 1/4 cup fresh cilantro Can substitute with green onion if desired.
  • 2 tablespoons lime juice Use fresh lime for better flavor.
  • 1 teaspoon salt Adjust to taste.
Optional Extras
  • 1 medium avocado, diced Add just before serving to prevent browning.
  • 1 can black beans, drained For added protein and substance.
  • 1/4 teaspoon cumin For additional flavor.
  • 1 teaspoon olive oil Optional drizzle for richness.

Method
 

Preparation
  1. If using fresh corn, cut the kernels off the cob. You can use it raw or char in a dry skillet for 3 to 5 minutes.
  2. Dice the tomatoes, red onion, jalapeno, and cilantro.
Mixing
  1. Add all ingredients to a bowl. Squeeze lime juice and sprinkle salt. Stir and adjust seasoning.
  2. Let the salsa sit for 10 to 30 minutes to allow flavors to blend.
