Ingredients
  

Beef and Broth
  • 3 pounds Chuck roast Best cut for tenderness
  • 4 cups Beef broth For cooking and dipping
  • 1 large Onion, sliced Or use a spoon of onion soup mix for convenience
  • 4 cloves Garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Bread and Cheese
  • 8 rolls Hoagie rolls or French rolls Sturdy rolls preferred
  • 8 slices Provolone or Swiss cheese Optional but highly recommended
  • 2 tablespoons Butter For toasting the bread, optional but adds flavor

Method
 

Preparation
  1. Put the sliced onion and minced garlic in the slow cooker.
  2. Add the chuck roast on top.
  3. Pour in the beef broth and Worcestershire sauce. Sprinkle with salt and pepper.
  4. Cook on low for 8 to 9 hours until the beef is tender and easy to shred.
Finishing
  1. Shred the beef in the slow cooker and let it sit in the juices for 10 to 15 minutes.
  2. Slice the rolls and butter them if desired, then toast them until lightly crisp.
  3. Pile on shredded beef, add cheese, and melt under the broiler for 1 to 2 minutes.
  4. Ladle some cooking liquid into small bowls for dipping.

Notes

The beef can be made ahead of time and stored in the broth. Reheat gently for best results. If you prefer to use an Instant Pot, cook on high pressure for about 60 minutes for a chuck roast.
