Preparation
- Pat the steaks very dry with paper towels.
- Season generously with salt and pepper on all sides.
- Let the steaks sit at room temperature for about 20 to 30 minutes.
- Heat a heavy skillet on medium high until hot and add the oil.
Cooking
- Place the steaks in the pan and do not move them around. Sear for about 3 to 4 minutes until a deep brown crust forms.
- Flip the steaks and sear the other side for another 3 to 4 minutes.
- Lower the heat to medium, add butter, garlic, and herbs.
- Spoon the melted butter over the steaks for about 1 minute.
Finishing
- Continue cooking on the stovetop flipping every minute or transfer the skillet to a 400°F oven for a few minutes until desired doneness.
- Pull the steak from heat at about 125°F for medium rare or 135°F for medium.
- Let the steaks rest for 5 to 10 minutes before slicing.
Notes
If your smoke alarm is sensitive, crack a window and turn on the fan before searing. Resting the steaks is crucial to keep the juices inside.
