Ingredients
  

For the Steaks
  • 2 pieces filet mignon steaks, about 1.5 to 2 inches thick
  • Kosher salt and black pepper Season generously
  • 1 tablespoon oil with a high smoke point, like avocado oil For cooking
  • 2 tablespoons butter For basting
  • 2 cloves garlic, lightly smashed (optional) Enhances flavor
  • 1 or 2 sprigs fresh rosemary or thyme (optional) For added aroma

Method
 

Preparation
  1. Pat the steaks very dry with paper towels.
  2. Season generously with salt and pepper on all sides.
  3. Let the steaks sit at room temperature for about 20 to 30 minutes.
  4. Heat a heavy skillet on medium high until hot and add the oil.
Cooking
  1. Place the steaks in the pan and do not move them around. Sear for about 3 to 4 minutes until a deep brown crust forms.
  2. Flip the steaks and sear the other side for another 3 to 4 minutes.
  3. Lower the heat to medium, add butter, garlic, and herbs.
  4. Spoon the melted butter over the steaks for about 1 minute.
Finishing
  1. Continue cooking on the stovetop flipping every minute or transfer the skillet to a 400°F oven for a few minutes until desired doneness.
  2. Pull the steak from heat at about 125°F for medium rare or 135°F for medium.
  3. Let the steaks rest for 5 to 10 minutes before slicing.

Notes

If your smoke alarm is sensitive, crack a window and turn on the fan before searing. Resting the steaks is crucial to keep the juices inside.
