Easy Fattoush Salad — Lebanese Crispy Pita

Ingredients
  

For the Salad
  • 2-3 rounds Pita bread For making crispy chips
  • 1 head Romaine lettuce Or another crunchy lettuce
  • 1 each Cucumber Persian or English is easiest
  • 2 each Tomatoes Ripe but not mushy
  • 1 bunch Radishes Optional but tasty
  • 1 each Green onion Or a small handful of thin sliced red onion
  • 1/2 cup Fresh parsley A must for flavor
  • 1/4 cup Fresh mint Even a little makes it pop
For the Dressing
  • 1 each Lemon juice Freshly squeezed
  • 1/4 cup Olive oil
  • 1 clove Garlic Grated or smashed
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Sumac Essential for the classic taste

Method
 

Prepare the Pita Chips
  1. Cut pita bread into bite-sized squares.
  2. Toss with a drizzle of olive oil and a pinch of salt.
  3. Bake at 400°F for about 8 to 12 minutes until crisp.
Make the Dressing
  1. In a bowl, mix together lemon juice, olive oil, grated garlic, salt, pepper, and sumac.
Assemble the Salad
  1. In a large bowl, combine chopped romaine, cucumber, tomatoes, radishes, green onion, parsley, and mint.
  2. Drizzle dressing over the salad and toss to combine.
  3. Add crispy pita chips just before serving to maintain crunch.

Notes

For meal prep, keep the crispy pita separate from the salad to maintain its crunch. This salad is best enjoyed fresh but can be stored for a short period if dressed. If the salad gets soggy, you can replace the crispy pita and enjoy again.
