Easy Falafel Wrap Pita Tzatziki Salad

Ingredients
  

Tzatziki Sauce
  • 1 cup plain Greek yogurt
  • 1 small cucumber, grated
  • 1 small garlic clove, finely grated or minced
  • 1-2 teaspoons lemon juice
  • 1 tablespoon chopped dill or mint
  • to taste salt and pepper
  • optional a drizzle of olive oil
Falafel
  • 1 cup soaked chickpeas
  • 1 cup parsley
  • 1 cup cilantro
  • 1 small onion
  • 2 cloves garlic
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • to taste salt and pepper
  • 1 pinch baking powder
  • 2-3 tablespoons flour or chickpea flour
Wrap Assembly
  • 4 pieces pita or flatbread
  • 4 cups salad mix (lettuce, cucumbers, tomatoes, red onion)
  • to taste pickles or pickled onions
  • to taste feta, olives, or hot sauce

Method
 

Prepare Tzatziki Sauce
  1. Squeeze grated cucumber in a clean towel to remove excess moisture.
  2. Combine yogurt, cucumber, garlic, lemon juice, dill or mint, salt, pepper, and olive oil in a bowl.
  3. Stir well, taste and adjust seasoning as needed.
Make Falafel
  1. Blend soaked chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, salt and pepper, baking powder, and flour until coarse.
  2. Chill mixture for 30 minutes for better shaping.
  3. Form mixture into balls or patties.
  4. Bake, air fry, or pan fry falafel until golden and crisp.
Assemble Wrap
  1. Warm pita or flatbread.
  2. Spread tzatziki sauce on the warm pita.
  3. Add 2 to 4 falafel pieces.
  4. Top with salad mix and optional ingredients as desired.

Notes

For optimal freshness, prepare components separately and assemble just before serving. Store leftovers appropriately to avoid sogginess.
