Preparation
- Drain and rinse the chickpeas. Pat them dry with a towel and let them sit for a few minutes.
- In a food processor, blend together chickpeas, onion, garlic, herbs, spices, salt, baking powder (if using), and flour until it resembles a chunky paste.
- Let the mixture rest for 10 to 15 minutes to allow the flour to hydrate.
Cooking
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Using damp hands, form the chickpea mixture into small patties. Place them on the prepared baking sheet.
- Brush or spray the tops lightly with olive oil and bake for about 15 minutes. Flip them, lightly oil the other side, and bake for another 10 to 15 minutes until golden and crisp.
- Allow the patties to cool for 3 to 5 minutes before serving.
Notes
For the best results, dry the chickpeas thoroughly, avoid over-blending for texture, and adjust salt to taste. Serve with your choice of sides.
