Ingredients
  

Main Ingredients
  • 2 pieces eggs Use 3 eggs for extra eggy rice.
  • 2 cups cooked rice Cold rice is best for frying.
  • 1/2 cup frozen peas and carrots Easy veggie shortcut.
  • 2 tablespoons soy sauce Adjust to taste.
  • 2 tablespoons butter or oil For frying.
  • 2 cloves garlic Fresh or jarred garlic can be used.
  • 2 stalks green onion Chopped, for garnish.
Optional Ingredients
  • pinch sugar To balance the saltiness.
  • pinch black pepper For warmth, optional.
  • squeeze sriracha For heat, optional.

Method
 

Preparation
  1. Heat a little oil or butter in a large skillet.
  2. Crack the eggs in and scramble them quickly. Move to a plate when just set.
Cooking
  1. Add a bit more oil if the pan looks dry, then toss in peas, carrots, and garlic. Cook for a couple of minutes until hot.
  2. Add cold rice and break it up with a spoon. Let it sit to crisp slightly and stir occasionally.
  3. Drizzle in soy sauce gradually and stir. Adjust seasoning to taste.
  4. Add scrambled eggs back to the pan and mix everything together. Finish with chopped green onion.

Notes

Best served immediately. Store leftovers in the fridge and reheat in a pan or microwave. Can be frozen for later use.
