  • 2-3 large Eggs Beat well before adding to the broth.
  • 1 tablespoon Cornstarch Optional for thickening.

  • 1 teaspoon Toasted sesame oil Add at the end for flavor.
  • 1/4 teaspoon White pepper For classic flavor; adjust to taste.
  • 2 tablespoons Green onions Chopped, for garnish.

Method
 

Preparation
  1. Bring the chicken or veggie broth to a gentle simmer in a pot.
  2. If using cornstarch, mix it with two tablespoons of water and stir into the simmering broth.
  3. Season the broth with soy sauce and white pepper.
Cooking
  1. Stir the broth in a slow circle, then pour the beaten eggs in a thin stream while stirring gently to create ribbons.
  2. Stop stirring after a few seconds to let the egg set into ribbons.
  3. Add a few drops of toasted sesame oil and top with chopped green onions before serving.

Notes

You can customize the soup by adding leftover veggies, tofu, or chicken. Use low sodium broth if concerned about salt intake.
