  • 2 cups edamame (shelled, cooked, and cooled) If using frozen, boil or microwave until tender.
  • 2 to 3 tablespoons tahini
  • 1 small clove garlic Use half if garlic shy.
  • 2 tablespoons lemon juice Plus more to taste.
  • 2 to 4 tablespoons cold water To blend smooth.
  • 1 tablespoon olive oil Optional for added richness.
  • 1/2 teaspoon salt Adjust to taste.
  • 1/2 teaspoon ground cumin Optional.

Preparation
  1. Add edamame, tahini, garlic, lemon juice, salt, and cumin to your blender or food processor.
  2. Blend, then drizzle in water a tablespoon at a time until it reaches a creamy consistency.
  3. Taste and adjust seasonings: add more lemon for brightness, more salt for flavor, or more tahini for richness.
  4. For an ultra-smooth dip, blend longer than you think is necessary.
Serving
  1. Serve immediately or refrigerate for 20-30 minutes for the flavors to meld.

Notes

Presentation ideas include swirling the dip and topping with olive oil and sesame seeds, or serving with various dippers. Stays fresh in a sealed container for 3-4 days in the fridge.
