  • 1 cup mango juice or mango nectar (cold) Use mango nectar for a sweeter flavor.
  • 1/2 cup coconut milk Drinkable carton kind is easiest.
  • 1 to 2 teaspoons honey or simple syrup Optional, to taste.
  • 1/2 cup ice Add more if you like it super icy.
  • 1/4 cup dragonfruit pieces Fresh, frozen, or freeze-dried.
  • a tiny squeeze none lime Optional, for brightness.

Method
 

Preparation
  1. Start with cold ingredients to minimize ice usage.
  2. Add mango juice and coconut milk to a blender or jar. Add most dragonfruit pieces and save a few for topping.
  3. Sweeten only if needed based on the sweetness of the mango nectar.
  4. Add ice, blend for a few seconds or shake for about 15-20 seconds until cold and mixed.
  5. Pour into a cup and top with the extra dragonfruit pieces.

Notes

This drink is best served right away but can be stored in the fridge for up to 24 hours. Shake or stir well before drinking as it will separate. Avoid freezing as coconut milk can get grainy.
