Preparation
- Crush the chocolate sandwich cookies in a zip top bag using a rolling pin until you have mostly fine crumbs with a few bigger pieces.
- Whisk the instant chocolate pudding mix with the cold milk until it thickens. Let it sit for a few minutes to set.
- Fold in the whipped topping until the mixture is fluffy and creamy.
Assembly
- Layer the dessert in clear cups or small jars: start with a spoonful of cookie crumbs, then a layer of pudding, and repeat until the cup is almost full.
- Top each cup with a thick layer of cookie crumbs to resemble dirt, and place candy pumpkins on top. Add green icing lines for vines if desired.
- Chill the cups in the refrigerator for at least 1 to 2 hours before serving.
Notes
For a crunchy top, add cookie crumbs right before serving, as they will soften if left in the fridge. These cups can be made a day in advance; just keep the final decorations separate until ready to serve.
