Easy Dill Pickle Pasta Salad Tangy Ranch

Ingredients
  

Pasta Salad Base
  • 8 oz short pasta (like rotini or shells) Cook until just tender, then rinse with cold water.
  • 1 cup chopped dill pickles Use classic dill pickles, not sweet.
  • 1 tbsp pickle juice For extra tang.
  • 1 cup ranch dressing Add more to taste.
  • 1 tbsp sour cream or mayo Optional, for a thicker dressing.
  • 1 tbsp fresh dill If available. Use dried dill in pinch.
  • 1/2 cup cheddar cubes Optional, for added creaminess.
  • 1/4 cup diced red onion Optional, for added flavor.
  • 1/2 cup chopped celery Optional, for added crunch.

Method
 

Preparation
  1. Cook the pasta according to package instructions until just tender, then rinse under cold water.
  2. Drain well to avoid watery dressing.
  3. Chop dill pickles and prepare any optional ingredients.
Mixing
  1. In a large bowl, combine the cooked pasta, chopped dill pickles, pickle juice, ranch dressing, and sour cream or mayo if using.
  2. Add fresh dill, cheddar cubes, diced onion, and chopped celery.
  3. Stir until well combined.
Chill and Serve
  1. Cover the bowl and refrigerate for at least 1-2 hours before serving for best flavor.
  2. Taste and adjust seasoning before serving, adding more salt or pickle juice as desired.

Notes

Best served chilled. Store leftovers in an airtight container in the refrigerator for up to 3 days. Stir in extra ranch or a splash of pickle juice before serving if it thickens. Freezing is not recommended.
