Ingredients
  

Candy Ingredients
  • 2 cups pecan halves, lightly toasted if you can Toast for enhanced flavor.
  • 12 ounces semi-sweet chocolate chips
  • 12 ounces milk chocolate chips
  • 11 ounces caramel bits, or 40 to 50 soft caramel candies unwrapped Chop wrapped caramels for faster melting.
  • 2 tablespoons heavy cream or evaporated milk For smoother caramel.
  • 1 tablespoon coconut oil or neutral oil Keeps chocolate silky.
  • 1 teaspoon vanilla extract
  • to taste Flaky sea salt Optional, but enhances the flavor.
  • as needed Nonstick spray or parchment For lining the baking sheets.

Method
 

Preparation
  1. Line two baking sheets with parchment or prepare a large parchment-lined counter space.
  2. Lightly spray your slow cooker insert with nonstick spray or use a slow cooker liner.
Slow Cooker Steps
  1. Add semi-sweet chocolate chips, milk chocolate chips, coconut oil, and vanilla to the slow cooker. Set to low.
  2. Stir every 15 to 20 minutes to ensure gentle, even melting.
  3. When the chocolate is almost melted, add the caramel bits and heavy cream. Keep on low and stir until smooth.
  4. Turn off heat and stir in the pecans until fully coated.
  5. Using a tablespoon or small cookie scoop, drop mounds onto the parchment sheets. Sprinkle with flaky salt if desired.
  6. Let the turtles set at room temperature for 1 to 2 hours or refrigerate for 20 to 30 minutes to set faster.

Notes

Store turtles in an airtight container at room temperature for up to 1 week, or refrigerate for 2 weeks. You can also freeze them for up to 1 month.
