Preparation
- Put sliced onion in the bottom of the slow cooker.
- Season the thighs with salt, pepper, paprika, and garlic.
- Whisk broth with tomato paste, plus soy sauce and brown sugar if using.
- Lay chicken on top of onions, then pour sauce over.
Cooking
- Cook on LOW for 6 to 7 hours or HIGH for 3 to 4 hours, until tender.
- If you want thicker sauce, remove chicken and simmer the liquid in a pan for 5 to 10 minutes.
Notes
Do not overfill the crockpot; keep it under about two-thirds full. Cook to your desired chicken texture – either sliceable or shreddable. For crisp edges, broil cooked thighs for 2 to 4 minutes.
