  • 2 to 3 pounds bone in or boneless chicken thighs (skinless works easiest)
  • 1 teaspoon salt, plus more to taste
  • 1 teaspoon black pepper
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder (or 3 cloves minced garlic)
  • 1 small onion, sliced Use as a rack to prevent sticking
  • 3 tablespoons tomato paste
  • 1 cup chicken broth
  • 1 tablespoon soy sauce (optional, but adds depth)
  • 1 tablespoon brown sugar (optional, balances the sauce)

Method
 

Preparation
  1. Put sliced onion in the bottom of the slow cooker.
  2. Season the thighs with salt, pepper, paprika, and garlic.
  3. Whisk broth with tomato paste, plus soy sauce and brown sugar if using.
  4. Lay chicken on top of onions, then pour sauce over.
Cooking
  1. Cook on LOW for 6 to 7 hours or HIGH for 3 to 4 hours, until tender.
  2. If you want thicker sauce, remove chicken and simmer the liquid in a pan for 5 to 10 minutes.

Notes

Do not overfill the crockpot; keep it under about two-thirds full. Cook to your desired chicken texture – either sliceable or shreddable. For crisp edges, broil cooked thighs for 2 to 4 minutes.
