Cooking Steps
  1. Heat a small nonstick skillet over medium heat. Add the olive oil and let it warm for about 30 seconds.
  2. Sprinkle the feta into the pan in a rough circle where you want the egg to sit. Let it sizzle for 30 to 60 seconds.
  3. Crack the egg right on top of the feta and season with black pepper and chili flakes if desired.
  4. Let it cook until the white is set, typically 2 to 3 minutes for a runny yolk. Cover with a lid for 30 to 60 seconds if you want a more set top.
  5. Slide it onto a plate, ensuring the crispy feta skirt remains intact.

Notes

Use medium heat to avoid burning the feta. Nonstick pans help with easy serving. Variations include adding cherry tomatoes, spinach, or a drizzle of spicy honey for extra flavor.
