Ingredients
  

For the crepes
  • 2 cups all-purpose flour Sifted for a smoother batter
  • 4 large eggs Room temperature
  • 4 cups milk You can use whole or low-fat
  • 1/4 cup melted butter For the batter and greasing the pan
  • 1 tablespoon granulated sugar To sweeten the crepes
  • 1/4 teaspoon salt Enhances flavor
For the filling
  • 2 cups whipped cream Lightly sweetened or use whipped mascarpone
  • 1 cup mascarpone cheese Optional for added richness
For serving
  • 1 cup fresh strawberries Sliced for decoration
  • powdered sugar for dusting Optional
  • chocolate drizzle, berry sauce, or whipped cream rosettes Optional toppings for serving

Method
 

Crepe Preparation
  1. In a large bowl, whisk together the flour, eggs, and milk until smooth. Let the batter rest for 20-30 minutes.
  2. Heat a nonstick pan over medium heat and lightly grease it with butter.
  3. Pour a small amount of batter into the pan, tilting to spread evenly. Cook until the edges lift and the top is set, then flip and cook the other side for 1 minute.
Assembling the Cake
  1. Stack cooked crepes, spreading a layer of the filling between each crepe.
  2. Once assembled, chill the cake in the fridge for at least 4 hours before serving.
Serving
  1. Slice the cake and serve with toppings such as strawberries, powdered sugar, or chocolate drizzle.

Notes

Crepes can be made ahead of time and stored in the refrigerator. Best served chilled for a clean slice.
