Main Ingredients
  • 4 medium Flour tortillas Medium or large, depending on skillet size.
  • 2 cups Cooked chicken Can use rotisserie, leftovers, or quick pan cooked.
  • 6 slices Bacon Crispy is best, chopped.
  • 1/2 cup Ranch dressing Bottled is fine or your favorite homemade.
  • 1 cup Shredded cheese Cheddar, Monterey Jack, or a blend.
  • optional Green onions, jalapenos, hot sauce, diced tomatoes For additional flavor.
  • 1 tablespoon Butter or oil For crisping the tortilla.

Method
 

Preparation
  1. Warm skillet over medium heat.
  2. Toss chicken with a spoon or two of ranch to coat lightly.
  3. Add cheese to one half of the tortilla, then add ranchy chicken, bacon, and a little more cheese.
  4. Fold the tortilla over like a half moon.
Cooking
  1. Add a small pat of butter or a drizzle of oil to the pan.
  2. Cook the quesadilla for 2 to 4 minutes per side, pressing lightly to ensure even browning.
  3. Flip when the bottom is golden and the cheese starts melting.
  4. Let it rest for a minute before slicing.

Notes

To keep finished quesadillas warm, place them in an oven at low heat. Avoid overloading with filling and keep heat moderate for crispy outer and melty inner texture.
