Preparation
- Whisk together the flour, baking soda, salt, and spices in a bowl.
- In a separate bowl, cream the softened butter and brown sugar until fluffy.
- Mix in the egg, molasses, and vanilla extract until well combined.
- Gradually mix in the dry ingredients until a soft dough forms.
- Wrap the dough in plastic wrap and chill for at least 1 to 2 hours, or overnight.
Baking
- Preheat your oven to 350°F (175°C).
- Roll out the chilled dough between two sheets of parchment paper.
- Cut out gingerbread men and place them on a baking sheet lined with parchment.
- Chill the cutouts for about 10 minutes if your kitchen is warm.
- Bake in preheated oven for 8 to 10 minutes, or until edges are set.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
Decorating
- Mix powdered sugar with milk or water until thick but pipeable; optional to add meringue powder.
- Outline the cookies with thicker icing, then fill in with slightly thinner icing.
- Decorate with sprinkles, buttons, and faces as desired.
- Let the icing dry at room temperature; may take a few hours.
Notes
Store iced cookies in an airtight container with parchment between layers. Cookies stay fresh for about 5 to 7 days. Freeze undecorated cookies for longer storage. Use a zip-top bag as a piping bag if needed.
