  • 2 tablespoons oil (any neutral oil works)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger (or 1 teaspoon ginger powder)
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika (optional) adds nice flavor
  • 1 can diced tomatoes (about 14 to 15 oz)
  • 2 cans chickpeas, drained and rinsed for cleaner taste
  • 3/4 to 1 cup water or broth

  • 1/2 cup coconut milk or a few spoonfuls of yogurt (optional for creaminess) careful with yogurt to avoid splitting

Method
 

Cooking Steps
  1. Warm the oil in a pot over medium heat. Add the onion and cook it for about 5 to 7 minutes until it softens and turns golden.
  2. Add garlic and ginger. Stir for about 30 seconds to 1 minute until fragrant.
  3. Sprinkle in the spices: curry powder, cumin, and paprika (if using). Stir for about 30 seconds.
  4. Pour in the diced tomatoes. Stir and let it cook for 2 to 3 minutes.
  5. Add chickpeas and water or broth. Bring to a gentle simmer and let it bubble for 12 to 15 minutes, stirring occasionally.
  6. For creaminess, add coconut milk or stir in yogurt off the heat, keeping it gentle.
  7. Taste and adjust with salt, pepper, and a squeezed lemon if needed.

Notes

Let onions cook long enough for the best flavor. Rinse chickpeas to remove canned taste. Gentle simmering is key. Adjust thickness by adding water or simmering uncovered.
