Easy Chicken Tostadas

Ingredients
  

Tortillas and Chicken
  • 8 pieces Corn tortillas Crispy base for tostadas.
  • 2 cups Cooked shredded chicken Can use rotisserie or leftover chicken.
Beans and Toppings
  • 1 cup Refried beans or black beans Optional but helpful for sticking toppings.
  • 1 cup Salsa or enchilada sauce For warming the chicken.
  • 1 cup Shredded cheese Any type of cheese you prefer.
  • 2 cups Shredded lettuce or cabbage For topping.
  • 1 cup Diced tomatoes, onions, jalapenos, cilantro Customize with your favorites.
  • 1 cup Sour cream For topping.
  • 2 pieces Lime wedges For serving.
  • to taste Hot sauce Optional, for heat.
  • 1 tablespoon Oil spray or oil For crisping the tortillas.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Brush or spray both sides of the tortillas lightly with oil and place them on a baking sheet.
  3. Bake for about 4 to 6 minutes per side until crisp and lightly golden.
Cooking Chicken
  1. While the tortillas bake, warm the shredded chicken in a skillet with some salsa or enchilada sauce.
  2. Season with salt, cumin, and garlic powder, if using.
  3. Heat until juicy and steamy.
Building Tostadas
  1. Spread a thin layer of beans on the crispy tortilla if using.
  2. Add the warm chicken on top.
  3. Sprinkle with cheese to melt slightly from the heat.
  4. Top with lettuce, tomatoes, onions, and any other desired toppings.
Serving
  1. Serve immediately for maximum crunch.

Notes

Tostadas are best when served fresh. Store components separately to keep them from getting soggy.
