Ingredients
  

For the sandwich base
  • 4 pieces Bolillo or telera rolls Can substitute with a crusty French roll or ciabatta.
Main fillings
  • 2 cups Shredded cooked chicken Rotisserie chicken works great.
  • 1 can Refried beans Optional, but adds creaminess.
  • 1/2 cup Mayonnaise Mix with lime and salt for extra flavor.
  • 1 medium Avocado Sliced or mashed.
  • 1 medium Tomato Thinly sliced.
  • 1/2 medium Onion Thinly sliced.
  • 1/4 cup Pickled jalapenos or fresh jalapenos Adjust spice level to your preference.
  • 1 cup Shredded cheese Oaxaca, mozzarella, pepper jack, or cheddar.
  • 1 cup Shredded lettuce or cabbage For crunch.
  • 1 lime Fresh lime Squeezed over the sandwich before serving.

Method
 

Preparation
  1. Preheat a skillet or griddle over medium heat. Add a bit of butter or oil if you want the bread extra crisp.
  2. Slice your roll lengthwise, ensuring it remains hinged.
  3. Spread mayonnaise on one side of the roll and refried beans on the other side, if using.
  4. Layer on the shredded chicken and season with salt, pepper, and a pinch of cumin or chili powder.
  5. Add cheese, followed by slices of tomato, onion, jalapenos, and lettuce.
  6. Top with avocado slices and a squeeze of lime, then press gently to close the sandwich.
Cooking
  1. Toast the sandwich on the skillet for 2 to 3 minutes per side until the bread is crisp and the cheese melts.
  2. Slice and serve immediately, keeping napkins close.

Notes

Great for meal prep; keep components separate in the fridge. Warm the chicken, toast the bread, and assemble when ready to eat. Don't overload with wet ingredients to avoid sogginess.
