Method
Marinate the Chicken
- In a bowl or zip bag, mix olive oil, lemon juice, garlic, oregano, salt, and pepper.
- Add chicken to the marinade, seal, and refrigerate for at least 15 minutes, or up to 4 hours for best flavor.
Cook the Chicken
- Cook the marinated chicken using one of the following methods: stovetop (in a heated pan), grill, or oven broil.
- Ensure chicken is browned and cooked through, let rest for a few minutes before slicing.
Assemble the Bowl
- Prepare rice according to package instructions.
- In a bowl, layer rice at the bottom, followed by cucumber, cherry tomatoes, red onions, sliced chicken, and drizzle with tzatziki.
- Top with feta cheese if desired.
Notes
This dish can be made ahead of time; store components separately for freshness. Leftover chicken and rice can be reheated with added moisture.
