Ingredients
  

For the broth
  • 4 cups chicken broth or stock, low sodium
  • 2 tablespoons soy sauce More if needed for flavor
  • 1 teaspoon sesame oil Optional splash for deeper flavor
  • 1 clove garlic, minced Fresh is best
  • 1 inch ginger, grated Fresh is preferable
  • Salt to taste
  • Pepper to taste
Main ingredients
  • 1 pound chicken thighs or breasts Thighs are juicier, breasts are leaner
  • 4 ounces ramen noodles Instant noodles work too
Toppings
  • 1 cup green onions, sliced For garnish
  • 1 cup mushrooms, sliced Optional
  • 1 cup spinach or bok choy Quick cooking vegetables
  • 1 cup corn Fresh or frozen
  • 1 cup shredded carrots For garnish
  • to taste chili crisp, toasted sesame seeds, nori, lime wedges Optional but recommended

Method
 

Preparation
  1. Sear the chicken: Heat a little oil in a pot. Salt and pepper the chicken, then brown it for a couple of minutes on each side.
  2. Build the broth: Add garlic and ginger, stir for about 30 seconds until fragrant. Pour in the broth and add soy sauce and sesame oil.
  3. Simmer until the chicken is cooked, about 12 to 18 minutes depending on the size.
  4. Remove the chicken, shred it using two forks, and return it to the pot or set aside for topping.
Cooking Noodles and Veggies
  1. Cook the noodles separately for a clearer broth, or if using one pot, add the noodles to the broth at the end.
  2. Add quick-cooking vegetables like spinach, bok choy, mushrooms, or corn for 1-2 minutes.
Assembly
  1. In bowls, layer in cooked noodles first, pour in the broth, top with shredded chicken, and add garnishes.
  2. Finish with sliced green onions and any additional spicy toppings you like.
