Ingredients
  

Main ingredients
  • 1 to 1.5 pounds Chicken, chopped into bite-size pieces Use thighs for extra juiciness or rotisserie chicken.
  • 2 cups Cooked rice Any type of rice works.
  • 1 to 2 Mango, diced Fresh is best, frozen works in a pinch.
  • 1 to 2 Avocado, diced or sliced Substitute cucumber if not ripe.
Sauce ingredients
  • 1/4 cup Soy sauce Coconut aminos is a good alternative.
  • 1 tablespoon Honey or brown sugar
  • 1 clove Garlic, minced
  • 1 teaspoon Ginger, minced
  • 1 tablespoon Rice vinegar
Optional toppings
  • 2 tablespoons Green onion, sliced
  • 1 tablespoon Sesame seeds
  • 1 cup Cucumber, sliced
  • 1 cup Edamame
  • 1 cup Shredded carrots
  • 1 lime Lime wedges, for serving

Method
 

Preparation
  1. Start the rice first if you do not already have it cooked.
  2. In a small bowl, mix the sauce ingredients: soy sauce, honey, garlic, ginger, and rice vinegar. Optionally add cornstarch mixed with water for thickness.
Cooking
  1. Cook the chicken in a hot pan with a little oil until it is browned.
  2. Pour in the sauce and cook until it bubbles and clings to the chicken.
Assembly
  1. Build your bowl: start with rice, add chicken, then top with mango and avocado.
  2. Finish with optional crunchy toppings and a squeeze of lime.

Notes

Leftovers can be stored together, but keep avocado separate until serving to prevent browning. For added protein, include extra chicken or a soft-boiled egg.
