  • 1 pound boneless skinless chicken breasts or thighs Thighs stay juicier; breasts are leaner.
  • 2 cups bell peppers (any colors) A mix is preferred for flavor balance.
  • 1 medium onion (yellow or red) Slice thinly for faster cooking.
  • 1 packet fajita seasoning Alternatively, DIY with chili powder, cumin, paprika, garlic powder, salt, and pepper.
  • 1 lime lime Squeeze at the end for flavor.
  • 2 tablespoons oil Use for browning chicken and cooking vegetables.

Method
 

Preparation
  1. Slice the chicken into thin strips and slice the peppers and onions into similar sizes.
  2. Toss chicken strips with fajita seasoning and a little oil.
Cooking
  1. Heat a large skillet over medium-high heat and add a bit of oil. Add chicken in a single layer.
  2. Sear the chicken for a couple of minutes until browned, then remove from the skillet.
  3. In the same skillet, add more oil if needed and toss in onions and peppers with a pinch of salt.
  4. Stir occasionally, allowing them to blister and soften.
  5. Add the chicken back into the skillet and toss everything together for about a minute.
  6. Squeeze lime over the top, taste for salt, and serve.

Notes

This recipe is flexible; consider adding beans or cheese. Serve with warm tortillas and let everyone customize their plates.
