Ingredients
  

Chicken and Veggies
  • 1.5 pounds boneless skinless chicken breasts or thighs, sliced into thin strips Thighs are juicier, breasts are leaner.
  • 3 pieces bell peppers, any colors, sliced Use a mix of colors for visual appeal.
  • 1 large onion, sliced Allows for sweetness when cooked.
  • 1-2 tablespoons oil (olive oil or avocado oil) For cooking the chicken and veggies.
  • 2-3 cloves garlic, minced (or 1 teaspoon garlic powder) Adds flavor to the dish.
  • 1 piece lime, juice plus extra wedges for serving Adds brightness and flavor.
Seasonings
  • 2 teaspoons chili powder Main seasoning for fajitas.
  • 1 teaspoon cumin Adds earthiness.
  • 1 teaspoon smoked paprika Provides a grill-like flavor.
  • 1 teaspoon salt To taste.
  • black pepper to taste
  • pinch of cayenne or a few shakes of hot sauce (optional) For additional heat.
For Serving
  • warm tortillas For wrapping the fajitas.

Method
 

Preparation
  1. Slice everything first: thin chicken strips, peppers, and onions.
  2. In a bowl, toss the chicken with half the oil, chili powder, cumin, paprika, salt, pepper, and a squeeze of lime.
Cooking
  1. Heat a large skillet over medium high heat and add a little oil.
  2. Add the chicken in one layer and let it cook for 3-4 minutes without moving it around too much.
  3. Flip the chicken and cook for an additional 2-3 minutes until cooked through and golden. Move chicken to a plate.
  4. In the same skillet, add the peppers and onions. Sprinkle with a pinch of salt and cook for about 6-8 minutes, stirring occasionally, until softened but still crisp.
  5. Add the chicken back in along with minced garlic and cook for another 30 seconds.
  6. Squeeze in the rest of the lime juice, taste, and adjust seasoning if necessary.
Serving
  1. Serve immediately with warm tortillas and your favorite toppings.

Notes

Keep toppings simple and warm your tortillas. You can slice the veggies ahead of time to save preparation time.
