Ingredients
  

For the filling
  • 3 cups cooked chicken, shredded or chopped Use rotisserie or cooked chicken.
  • 1 can cream of chicken soup You can substitute with cream of mushroom if desired.
  • 1.5 cups chicken broth Adjust to reach desired creaminess.
  • 1 splash milk For extra creaminess, optional.
  • 3 cups mixed vegetables Frozen peas and carrots work well.
For the biscuit topping
  • 1 package Red Lobster style biscuit mix Includes garlic herb butter packet, if available.
  • 3/4 cup milk Refer to the biscuit mix package for the exact amount.
  • 2 tablespoons melted butter Brush on top before serving.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a 9x13 baking dish.
  2. Place the cooked chicken in the prepared baking dish.
  3. Add mixed vegetables to the dish if desired.
  4. In a bowl, combine the cream of chicken soup, chicken broth, and splash of milk.
  5. Pour the mixture over the chicken and vegetables in the baking dish.
Biscuit Preparation
  1. In another bowl, mix the biscuit mix with the recommended amount of milk.
  2. Stir until just combined, being careful not to overmix.
  3. Spoon the biscuit batter over the filling without smoothing it out too perfectly.
Baking
  1. Bake for about 30 to 40 minutes until the top is golden and the filling is bubbling.
  2. Brush the top with melted butter and, if included, the seasoning packet.
  3. Allow to rest for 10 minutes before serving.

Notes

Avoid overmixing the biscuit batter for best texture. Customize the filling with your choice of vegetables. Store leftovers covered in the fridge for up to 3 days.
