Preparation
- Cook the noodles according to the package instructions, then drain and toss with a little oil to prevent sticking.
- Thinly slice the chicken and season with salt and pepper.
- Heat a large pan or wok over medium-high heat and add a little oil.
- Cook the chicken in the hot pan until just done, then remove and set aside.
Cooking
- Add vegetables to the same pan, starting with the longer-cooking ones like carrots, followed by cabbage and bean sprouts.
- Add garlic and ginger, stirring for about 30 seconds until fragrant.
- Return the cooked noodles and chicken to the pan and pour in the sauce. Toss everything together until well combined and glossy.
Notes
Keep the heat high while cooking to avoid soggy noodles and overcooked veggies. This dish makes great leftovers and can be reheated easily.
