Casserole Ingredients
  • 2 cups cooked chicken, shredded or chopped Rotisserie chicken is perfect.
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream or plain Greek yogurt
  • 2 cups shredded cheddar or mozzarella Or a mix.
  • 1 cup cauliflower rice or chopped steamed broccoli
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • to taste salt and pepper
  • optional cooked bacon, green onions, paprika Optional extras.

Method
 

Preparation
  1. Preheat your oven to 375 F.
  2. In a big bowl, mix softened cream cheese with sour cream until mostly smooth.
  3. Stir in garlic powder, onion powder, salt, and pepper.
  4. Add cooked chicken, your cooked veggies, and most of the shredded cheese to the bowl.
  5. Spread the mixture into a baking dish.
  6. Top with the remaining cheese.
  7. Bake for about 20 to 25 minutes until hot and bubbly.
  8. If you want a more golden top, broil for 1 to 2 minutes, but watch it closely.

Notes

Great for meal prep as it holds up for days and can be reheated easily. For a ranch flavor, consider adding ranch seasoning.
