  • 4 pieces chicken thighs or breasts Thighs are preferred for tenderness.
  • 1 medium onion Chopped
  • 2 cloves garlic Minced
  • 1 medium bell pepper Any color or a mix
  • 1 cup mushrooms Optional, sliced
  • 28 ounces canned crushed tomatoes Or diced tomatoes
  • 2 tablespoons tomato paste For richer sauce
  • 2 tablespoons olive oil For cooking
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil Or Italian seasoning
  • 1/2 cup broth or water As needed for thickness
  • 1 splash white wine Optional

Method
 

Preparation
  1. Brown the chicken in olive oil over medium heat until golden brown.
  2. Remove chicken and cook the onion and bell pepper in the same pan until soft.
  3. Add garlic and tomato paste, cooking for 30 seconds until fragrant.
  4. Stir in the crushed tomatoes, herbs, salt, and pepper, followed by the chicken.
  5. Simmer gently for 25 to 35 minutes, covered, until chicken is tender.
  6. Adjust seasoning and let the sauce thicken if necessary by simmering uncovered.

Notes

This dish reheats well, and is even better the next day. Serve it over pasta, mashed potatoes, or with crusty bread.
