Ingredients
  

Main Ingredients
  • 3 cups cooked and shredded chicken Rotisserie chicken is perfect.
  • 4 cups small broccoli florets Fresh or frozen, thaw and pat dry if frozen.
  • 1 can cream of chicken soup Can substitute with the from-scratch sauce.
  • 1/2 cup sour cream For added richness.
  • 2 cups shredded cheddar cheese Mix of sharp cheddar and mozzarella recommended.
  • 1 cup crushed buttery crackers or seasoned panko For the crunchy topping.
  • 2 tablespoons melted butter To mix with crumbs for topping.
Seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • to taste salt and black pepper
  • optional pinch red pepper flakes For heat.
Optional Add-ins
  • 1 cup cooked rice For a fuller meal.
  • 1/2 cup sautéed mushrooms For a deeper flavor.

Method
 

Preparation
  1. Preheat the oven to 375°F.
  2. Grease a 9x13 inch baking dish.
  3. Stir together the chicken, broccoli, cream of chicken soup (or substitute), sour cream, half of the cheese, and seasonings.
  4. Spread the mixture in the greased baking dish.
  5. Top with the remaining cheese and the crushed cracker or panko mixture.
Baking
  1. Bake for 25 to 30 minutes until the edges are bubbling and the topping is golden.

Notes

You can prepare the casserole up to the topping and refrigerate for up to 24 hours. Add topping just before baking for optimal crispness. It freezes well without the topping for up to 2 months.
