Preparation
- Mix your sauce. If using chipotle mayo, you're done. If making your own, stir together 2 tablespoons mayo with 1 teaspoon minced chipotle in adobo and a pinch of salt.
- Prep the chicken. Toss plain chicken with a spoonful of chipotle sauce to keep it moist. Warm cold chicken in the microwave to help melt the cheese faster.
Building the Sandwich
- Lay out two slices of bread. Spread chipotle sauce on the inside. Add cheese, then chicken, then avocado slices, then more cheese.
- Spread a thin layer of butter or mayo on the outside of each slice of bread.
Cooking
- Heat a skillet over medium to medium-low. Add the sandwich and cook for 3 to 5 minutes per side, pressing gently with a spatula. Flip when the bread is deep golden and the cheese starts to melt.
Finishing Touches
- Let the sandwich sit for a minute before cutting to keep the filling from sliding out and save your mouth from lava cheese.
Notes
Keep heat medium-low to ensure cheese melts before bread browns. Choose the right avocado that is ripe but not mushy. Do not overload the sandwich with too much filling. Season the chicken to enhance flavor.
