Easy Chia Pudding Overnight Vanilla Berry

  • 1/4 cup chia seeds Main thickening agent.
  • 1 cup milk (dairy or plant-based) Almond or oat milk is recommended.
  • 1-2 teaspoons vanilla extract Vanilla bean paste can be used for more flavor.
  • 1-2 tablespoons sweetener (maple syrup, honey, or agave) Adjust according to taste.
  • 1 cup berries (fresh or frozen) Strawberries and blueberries work well.
Optional Ingredients
  • a pinch none salt Enhances flavor.
  • 1 tablespoon Greek yogurt For extra creaminess.
  • 1 squeeze lemon juice To balance sweetness if berries are sweet.
  • 1 handful granola To add crunch before serving.

Method
 

Preparation
  1. In a medium bowl or big jar, add 1/4 cup chia seeds and 1 cup milk.
  2. Stir in 1 to 2 teaspoons vanilla and 1 to 2 tablespoons sweetener. Add a tiny pinch of salt if desired.
  3. Stir well for about 30 seconds, wait 5 minutes, and stir again to break clumps.
  4. Cover and refrigerate for at least 4 hours, preferably overnight.
Serving
  1. In the morning, stir the pudding. If it's too thick, add a splash more milk.
  2. Top with berries and enjoy.

Notes

For added flavor, mash some berries and swirl them in before chilling. This pudding keeps well in the fridge for 3-4 days.
