Ingredients
  

For the Garlic Butter
  • 6 tablespoons softened real butter Salted or unsalted works
  • 3 cloves garlic, finely minced Can substitute with 1.5 teaspoons garlic powder
  • 2 tablespoons fresh parsley Or 1 teaspoon dried parsley
  • 1 pinch kosher salt
  • 1 pinch black pepper
  • 1 tablespoon olive oil Optional, to thin the butter for easier spreading
For the Toast
  • 8 slices thick-cut Texas toast bread or thick Italian bread Thick slices are key
  • 1 cup shredded mozzarella For stretchy pull
  • 1/4 cup grated Parmesan For salty, nutty flavor
  • 1 tablespoon crushed red pepper Optional, for added heat
  • 1 tablespoon Italian seasoning Optional, for extra flavor
  • 1 teaspoon paprika Optional, for color

Method
 

Preparation
  1. Preheat your oven to 425°F or set the broiler to high.
  2. Line a baking sheet with foil and lay the bread in a single layer.
  3. If the bread feels a little soft, let it sit out on the counter for 5 minutes.
Make the Garlic Butter
  1. In a bowl, combine softened butter, garlic, parsley, salt, and pepper.
  2. If the butter feels stiff, splash in a teaspoon or two of olive oil.
  3. Mix everything together until it’s creamy and easy to spread.
  4. Spread a generous layer on each slice of bread, ensuring to cover the corners.
Bake or Broil
  1. Top each slice with mozzarella and a sprinkle of Parmesan.
  2. For baking, slide the tray onto the middle rack and bake for 6 to 8 minutes.
  3. For broiling, place the tray on the upper rack and broil for 2 to 4 minutes, watching closely.
  4. For extra crunch, flip the bread once under the broiler for 45 seconds before adding toppings.

Notes

Can be paired with soups, pasta, grilled proteins, or served as a side. Leftovers can be stored in an airtight container for up to 3 days in the fridge.
