Preparation
- Preheat your oven to 375°F (190°C). Butter a 9x13 baking dish or spray it well.
- In a saucepan, melt the butter over medium heat. Add the finely chopped onion and cook until soft, about 4 to 5 minutes.
- Add the minced garlic and sauté for about 30 seconds.
- Sprinkle in the flour and stir until it forms a smooth paste.
- Slowly whisk in the milk and cream, continuing to whisk until the sauce thickens and lightly coats a spoon, approximately 4 to 6 minutes.
- Turn the heat down low and stir in about 1.5 cups of cheese. Reserve the remaining cheese for topping. Season with salt and pepper to taste.
Layering and Baking
- Layer half of the sliced potatoes in the prepared baking dish.
- Pour half of the sauce over the potatoes.
- Repeat with the remaining potatoes and sauce.
- Cover tightly with foil and bake for 45 minutes.
- Remove the foil, sprinkle the remaining cheese on top, and bake uncovered for an additional 20 to 30 minutes until bubbly and golden.
- Let it rest for 10 to 15 minutes before serving.
Notes
You can prepare this dish a day ahead, chill it, then bake when ready. For added variation, consider incorporating cooked crumbled bacon or sautéed mushrooms.
