Ingredients
  

Main Ingredients
  • 3 cups cooked chicken, finely chopped Can use leftover roast chicken, rotisserie chicken, or poached chicken.
  • 1 cup shredded mozzarella or cheddar A mix of both cheeses is also great.
  • 2 large eggs Bind the ingredients together.
  • 1/3 cup flour or fine breadcrumbs Use as a binder for the fritters.
  • 2 tablespoons mayo or plain Greek yogurt Adds moisture and flavor.
  • 2 tablespoons green onions, thinly sliced For added flavor.
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 3/4 teaspoon salt Plus more to taste.
  • 1/4 teaspoon black pepper
  • Neutral oil for pan frying Use a high-heat neutral oil.
  • Lemon wedges and chopped parsley for serving Add freshness to the dish.

Method
 

Preparation
  1. In a big bowl, combine the chicken, cheese, eggs, flour, mayo, green onions, and seasonings. Stir until the mixture sticks together.
  2. If the mixture seems dry, add 1 tablespoon of mayo or yogurt. If it seems too loose, add 1 tablespoon of flour.
Cooking
  1. Heat a large skillet over medium heat with enough oil to lightly coat the bottom.
  2. Scoop about 2 tablespoons of the mixture and gently flatten it in the pan. Fry for 3 to 4 minutes per side until deep golden and cooked through, aiming for an internal temperature of 165°F.
  3. Set the fritters on a rack or paper towel for a minute and sprinkle with a little salt and parsley. Serve hot with lemon wedges.

Notes

The mixture can be made ahead and chilled for up to 24 hours. Cooked fritters can be stored in a sealed container for 3 to 4 days. They can be frozen for up to 2 months and should be reheated in the oven or air fryer for best texture.
