Easy Cauliflower Fried Rice

Main Ingredients
  • 1 head Riced cauliflower (fresh or frozen) If using frozen, thaw and squeeze out moisture.
  • 2 large Eggs Perfect for a big skillet.
  • 2 cloves Garlic Chopped.
  • 1 tsp Ginger Optional, chopped.
  • 2 sticks Green onions Chopped for garnish.
  • 1 cup Peas and carrots Optional, can use any veggies you like.
  • 1 cup Cooked protein Chicken, shrimp, pork, or tofu (optional).
  • 2 tbsp Soy sauce or coconut aminos For seasoning.
  • 1 tbsp Sesame oil For flavor, a little goes a long way.
  • to taste Salt and pepper For seasoning.
  • 1 tbsp Neutral oil For cooking.

Method
 

Preparation
  1. Heat a large skillet on medium-high heat with a little neutral oil.
  2. Scramble the eggs in the skillet, then slide them onto a plate.
  3. Add a touch more oil, then cook garlic and any chopped veggies for a couple of minutes.
  4. Add the riced cauliflower to the skillet and stir-fry, keeping it moving to avoid steaming.
  5. Add soy sauce or coconut aminos, then toss in the cooked egg and any cooked protein.
  6. Finish with chopped green onions and a few drops of sesame oil.

Notes

For best results, cook in batches if doubling the recipe to avoid crowding the pan. Adjust seasoning to taste, and remember to finish with sesame oil for enhanced flavor.
