  • 2 large fresh tomatoes (heirloom or vine ripened) Sliced about a quarter to half inch thick
  • 8 oz fresh mozzarella Sliced to a similar thickness as tomatoes
  • 1 cup fresh basil leaves Whole leaves for layering
  • 1 teaspoon flaky salt To enhance the flavors
  • 1 teaspoon black pepper Freshly ground
  • 2 tablespoons extra virgin olive oil For drizzling
  • 1 tablespoon balsamic glaze Optional, use sparingly

Method
 

Preparation
  1. Slice the tomatoes about a quarter to a half inch thick and let them sit on a paper towel for a minute if they are very juicy.
  2. Slice the fresh mozzarella to a similar thickness.
  3. Layer the tomato slices, mozzarella slices, and basil leaves on a plate, overlapping them in a circle for a restaurant-style presentation.
  4. Season the salad with flaky salt and black pepper.
  5. Drizzle with olive oil and balsamic glaze, if desired.

Notes

Serve the salad shortly after assembling to enjoy its freshness. If necessary, adapt the salad with additional ingredients like roasted peppers or pesto for improved flavor if tomatoes are not at their best.
