Easy Cabbage Boil & Corned Beef Cabbage Rolls

Ingredients
  

Cabbage Preparation
  • 1 whole green cabbage (or savoy) Choose savoy for softer leaves.
  • 2 tablespoons salt For boiling water.
Filling
  • 1 cup corned beef Use leftover, deli slices, or brisket.
  • 1 medium onion, sliced
  • 3-5 cloves garlic, smashed
  • 2 tablespoons butter or olive oil For cooking the filling.
Cooking Liquid
  • 4 cups chicken broth or veggie broth
  • to taste salt and black pepper
  • optional red pepper flakes, lemon juice, chopped parsley For added flavor and garnish.

Method
 

Prepare the Cabbage
  1. Cut out the core of the cabbage and lower it into simmering salted water for 2 minutes to loosen the leaves.
  2. Set the leaves on a plate to cool.
Make the Filling
  1. Chop leftover corned beef or slice deli corned beef into thin ribbons.
  2. In a pan, warm butter or olive oil, add onion and garlic, then add the corned beef until heated through and fragrant.
  3. Add black pepper to taste.
Roll the Cabbage
  1. Place a spoonful of filling near the bottom of a cabbage leaf, tuck in the sides, and roll it up like a burrito.
Cook the Rolls
  1. Nestle the rolls into a pot, add the broth until it reaches halfway up, cover, and simmer for 15 to 20 minutes.

Notes

Keep the heat at a low simmer to ensure a tender texture without tearing the leaves. Taste the broth early for seasoning.
