Topping
  • 2-3 cups fresh tomatoes, chopped Any ripe variety works.
  • 1-2 cloves garlic One for the topping, one for rubbing on toast.
  • 1 handful fresh basil, thinly sliced or torn
  • 2-3 tablespoons extra virgin olive oil Good quality is preferred.
  • 1-2 teaspoons balsamic vinegar Optional.
  • to taste Salt and black pepper
Bread
  • 1 loaf baguette or crusty loaf, sliced Sturdy bread is recommended.

Method
 

Preparation
  1. Chop the tomatoes and let them sit in a bowl for about 5 minutes to drain excess liquid.
  2. Mix the topping by combining tomatoes, basil, grated garlic, olive oil, salt, and pepper. Optionally, add balsamic. Stir gently to keep it chunky.
Cooking
  1. Toast the bread slices in the oven at 400°F for 6 to 10 minutes, flipping once, until golden.
  2. Rub a peeled garlic clove on the warm toast for extra flavor.
Assembly
  1. Assemble the bruschetta right before serving by spooning the topping over the toast.

Notes

For best results, use ripe tomatoes at room temperature and assemble right before serving to maintain crisp bread. You can make the topping ahead of time and keep it in the fridge for up to 6 hours.
