  • 8 to 12 slices bacon Cooked until crisp, then chopped.
  • 2 to 3 cups shredded cheese Cheddar is classic, but a mix is great.
  • 8 large eggs Size matters for the custard texture.
  • 2 cups milk Whole milk makes it richer.
  • 1/2 cup cream Optional for added richness.
  • 1 small onion or 2 green onions Sliced, optional.
  • 1 teaspoon salt Adjust to taste.
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder Optional.
  • as needed butter or cooking spray For greasing the baking dish.

Method

Preparation
  1. Cook the bacon until crisp in a skillet or oven, then chop it and set aside.
  2. Butter or spray your baking dish. Layer the cubed bread evenly at the bottom.
  3. Sprinkle the chopped bacon over the bread, followed by the shredded cheese. If using onions, scatter them on top.
  4. In a large bowl, whisk together the eggs, milk, optional cream, salt, pepper, and any other seasonings until smooth.
  5. Pour the egg mixture evenly over the bread and gently press the bread down to soak it in.
  6. Let the mixture rest for 20 to 30 minutes, or cover and refrigerate overnight for best results.
  7. Preheat your oven to 350°F (175°C) and bake for 40 to 50 minutes, until the center is set and the top is golden.

Notes

Enjoy leftovers for up to 4 days in the fridge or freeze for up to 2 months. Reheat in the microwave or oven for best texture.
