Ingredients

Main Ingredients
  • 1 cup rice (white, brown, or jasmine)
  • 1 can black beans (15 ounce), drained and rinsed Rinsing helps remove extra salt and the canned taste.
  • 1 small onion, chopped Can substitute with onion powder if unavailable.
  • 2 cloves garlic, minced Garlic powder can be used as a substitute.
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder (optional) Adds flavor and spice.
  • Salt and pepper to taste
  • 0.5 cup water or broth For saucy beans.
  • Lime wedges (optional) Recommended for serving.

Method

Preparation
  1. Cook your rice based on the package directions. Start with brown rice as it takes the longest.
  2. In a pan, warm olive oil over medium heat and add the chopped onion. Cook for about 3 to 4 minutes until softened.
  3. Add minced garlic and stir for about 30 seconds, being careful not to burn the garlic.
  4. Stir in the rinsed black beans, cumin, chili powder, and a pinch of salt and pepper.
  5. Add water or broth, and let everything simmer for 5 to 8 minutes until it reaches your desired sauciness.
  6. Taste and adjust seasoning as needed, adding more salt or a squeeze of lime.
  7. Scoop rice into bowls, spoon beans on top, and add your desired toppings.

Notes

Store rice and beans separately for meal prep. Rinse canned beans to enhance flavor. Customize with toppings like avocado, salsa, or a fried egg.
