  • 2 to 3 medium beets Regular red beets are commonly used, but golden beets can be milder.
  • 1 to 2 teaspoons olive oil Use just enough to lightly coat the beet slices.

Preparation
  1. Preheat your oven to 300°F (150°C).
  2. Wash and peel the beets. If the skin is thin, you may leave some on for smoother chips.
  3. Slice the beets very thinly, preferably using a mandoline for evenness.
  4. Pat the beet slices dry with a clean towel or paper towels to reduce moisture.
  5. Toss the slices with olive oil and a pinch of salt, ensuring they are lightly coated.
  6. Line a baking sheet with parchment paper and spread the beet slices in a single layer without overlapping.
Baking
  1. Bake the chips for 35 to 55 minutes, flipping once halfway through. Keep a close eye towards the end.
  2. Once baked, let them cool on the tray for about 5 to 10 minutes to allow further crisping.

Notes

Serve the beet chips with a creamy dip, alongside a snack board, or as a salad topper. Store leftovers in a container that is not airtight to maintain crispiness.
