Easy Beef Kebabs Grilled Marinated Skewers

Ingredients
  

Beef and Vegetables
  • 1.5 to 2 pounds beef, cut into 1 to 1.25 inch cubes (sirloin is easy and reliable)
  • 2 pieces bell peppers, cut into chunks
  • 1 piece red onion, cut into chunks
  • optional mushrooms, zucchini, or cherry tomatoes Feel free to swap different veggies.
  • as needed Skewers (metal or wood) Soak wooden skewers in water for at least 30 minutes.
Marinade
  • 1/3 cup soy sauce
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice or red wine vinegar
  • 2 tablespoons honey or brown sugar
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • optional pinch of chili flakes for heat

Method
 

Preparation
  1. Soak wooden skewers in water for at least 30 minutes so they do not burn. Skip this if using metal skewers.
  2. Whisk marinade ingredients in a bowl. Taste it; it should be salty, slightly sweet, and a little tangy.
  3. Add beef cubes to a zip bag or bowl, pour in marinade, and toss well. Cover and refrigerate for 2 to 8 hours.
Cooking
  1. Heat your grill to medium high. If using a grill pan indoors, preheat until it is hot.
  2. Thread beef and veggies onto skewers. Alternate as preferred.
  3. Grill for 8 to 12 minutes total, turning every couple of minutes. Pull them when the beef is cooked to your liking.
  4. Rest skewers for 2 to 3 minutes before serving.

Notes

For best results, cut beef and vegetables into uniform sizes. Keep the grill hot for a good char, and avoid overcrowding the skewers.
